		<description><![CDATA[I grew up eating pinole as a hot cereal ( much like wheatina) brown the cornmeal in skillet till golden brown, add water to the mixture in the skillet to desired consistency. Season to taste with sugar or honey. Add milk to the mixture ( cereal) to eat, like you would add milk to oatmeal.]]></description>

Native American people who subsisted on corn invariably subjected it to an alkaline process using lye (from hardwood ashes) or lime (calcium hydroxide).  The result is a white corn that the Mexicans call nixtamal (from the Aztec/Nahuatl) or the southerners call hominy (from the Cherokee).  Outside of the First Peoples culture areas we see an unprocessed, yellow corn meal.   Here in California many of  the supermarkets even sell yellow corn tortillas although the tortillas in the Mexican markets are the white stuff that the Mexicans are used to.  I would be very much surprised if the traditional pinole were made from unprocessed corn.  It may not sound as &#039;natural&#039; but it is more traditional.]]></description>
